Miriam and Nael, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
Being full Egyptian and married to a full egyptian, it comes down to us loving falafel so much. When my husband moved here from Egypt, his main worry was not being able to find authentic Egyptian falafel. Falafel was one of his favorite things that he enjoyed back home. So one day we thought to ourselves, maybe we should open up a falafel restaurant. We looked into it and realized there was tons of overhead and money involved. We thought about it for a few but hesitated. So then one day we went to my uncle’s house and were just mentioning the idea to him.
My uncle is the CEO of Kareem carts in LA and has been open for more than 25 years so if anyone has advice in the Restaurant industry it’s him. The first thing he told us was “open up a food truck now and thank me later” He talked us into investing into a food truck and we told ourselves that everything we make on the food truck will be as authentic as it is in Egypt. And that’s how Falafel Factory was established.
