Miriam and Nael, let’s start with your story. We’d love to hear how you got started and how the journey has been so far. Being full Egyptian and married to a full egyptian, it comes down to us loving falafel so much. When my husband moved here from Egypt, his main worry was not being able to find authentic Egyptian falafel. Falafel was one of his favorite things that he enjoyed back home. So one day we thought to ourselves, maybe we should open up a falafel restaurant. We looked into it and realized there was tons of overhead and money involved. We thought about it for a few but hesitated. So then one day we went to my uncle’s house and were just mentioning the idea to him.

My uncle is the CEO of Kareem carts in LA and has been open for more than 25 years so if anyone has advice in the Restaurant industry it’s him. The first thing he told us was “open up a food truck now and thank me later” He talked us into investing into a food truck and we told ourselves that everything we make on the food truck will be as authentic as it is in Egypt. And that’s how Falafel Factory was established.

Has it been a smooth road?

We are not going to lie, this is probably one of the hardest jobs you can ever get into.

Even on our days off, we find ourselves working, prepping for the next day. Especially when we sell out. From having to go to Costco, to prepping the food, to customer service, marketing, and etc. The hardest thing in this industry has been finding the right staff.

Not everyone can handle the pressure when you have long lines of hangry people trying to eat at the same time. But, at the same time, nothing comes easy and hard work always pays off. We don’t regret it at all.

THE FALAFEL FACTORY STORY

So let’s switch gears a bit and go into the The Falafel Factory story. Tell us more about the business.

The purpose of Falafel Factory was to introduce authentic Egyptian falafel and made from scratch hummus. We have options for everyone (vegans, vegetarians, and meat lovers). Our specialty is falafel and hummus, they are both gluten-free and made from scratch daily. We serve our falafel in numerous ways from a traditional wrap, to our #1 seller the falafel burger, our garlic falafel fries, and the falafel platter.

We are most proud of our hard work with serving food that anyone can have. When it comes to customers being gluten-free or on a keto diet we’ve got options for them because we know what we make our product with and what it’s contained with.

Customers get so excited when they realize our falafel isn’t made with wheat and is gluten-free. They especially love when they see a real Egyptian chef (Nael) making their falafel. They can feel that’s its really made with love. What really sets us apart from others is our falafel and the way we prepare it. Lebanese, Syrian, and Palestinian Falafel is made with hummus. Instead, we use fava beans, the real Egyptian way.

THE FALAFEL FACTORY NEXT

Where do you see your industry going over the next 5-10 years?  Any big shifts, changes, trends, etc?

Within the next 5-10 years, we plan to add more trucks to expand throughout California. We love the fact that we can just go anywhere and satisfy customers cravings. Having customers from all over the world and introducing them to falafel is really the best feeling ever.

We are so proud to know that Falafel Factory has catered for top companies and corporations and served at big events in LA and will continue to do so.
